Elevate your fish dinner with zesty Thai dressing.
Ingredients:
  • 180g (1 1/2 cups) white long-grain rice
  • 1 140ml can coconut milk
  • 12.20 gm fish sauce
  • 1 fresh red birdseye chilli, chopped
  • 8.00 gm brown sugar
  • 2 (about 300g each) firm white fish fillets (like silver warehou), diagonally halved
  • 125.00 ml fresh coriander leaves
  • 1 bunch gai lum, ends trimmed, washed
Instructions:
  • Prepare the rice in a large saucepan of salted boiling water according to the package instructions until tender.
  • Combine coconut milk, fish sauce, lemon juice, chilli, and sugar in a jug and set aside. Heat oil in a large frying pan over medium-high heat. Cook fish until golden brown on each side. Pour coconut milk mixture over the fish, bring to a boil over high heat, then simmer uncovered for 2-3 minutes until fish flakes easily. Stir in coriander.
  • Cook the gai lum in a large saucepan of salted boiling water for 1-2 minutes until it just wilts. Drain.
  • Serve the rice on plates, place the fish on top, drizzle with sauce, and enjoy with the gai lum.
