Cheesy pizza cupcakes with salami and pepperoni, blended with mozzarella, Cheddar, and Mexican cheeses.
Ingredients:
  • 2 tablespoons olive oil, or more as needed
  • 1 (13.8 ounce) can refrigerated pizza dough (such as Pillsbury®)
  • 1 teaspoon garlic salt
  • 1 cup tomato sauce
  • 1 cup sliced pepperoni
  • 1 cup chopped bell pepper
  • 0.5 cup chopped red onion
  • 1 cup shredded 4-cheese Mexican blend cheese
  • 1 cup diced salami
  • 1 cup shredded mozzarella cheese
  • 0.25 cup shredded sharp Cheddar cheese
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C), then give the cups of two 12-cup muffin tins a light greasing with oil.
  • Press pizza dough into each cup to form a crust covering the bottom and extending 1/3 to 1/2 up the sides. Sprinkle with garlic salt, and spoon 1 tablespoon of sauce over each crust.
  • Create delicious layers in the muffin cups starting with pepperoni, bell pepper, and onion. Sprinkle 1 tablespoon of Mexican cheese on each layer. Follow with salami, more bell peppers, and pepperoni. Top with mozzarella and Cheddar cheese. Keep layering toppings until slightly overfilling the muffin cups; ingredients will settle as they cook without overflowing.
  • Place in the warm oven for 10 minutes. Afterwards, take out and let it cool in the tins for 2 minutes before serving.
