Transform fresh garden rhubarb into a mouthwatering warm dessert with just 4 simple ingredients.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 3/4 cup cold butter or margarine, cut into small pieces
  • 1 3/4 cups sugar
  • 3 eggs
  • 4 cups sliced fresh rhubarb
  • Whipped cream, if desired
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pan). Set aside 2 tablespoons of the cake mix. In a large bowl, blend butter into the rest of the cake mix using a pastry blender or two knives until the mixture is crumbly. Press 2 cups of the mixture into the bottom of an ungreased 13x9-inch pan, saving the rest for the topping. Bake for 13 minutes.
  • In a large bowl, use an electric mixer to beat 2 tablespoons of reserved cake mix, sugar, and eggs until creamy. Stir in rhubarb, then pour over the partially baked crust. Sprinkle the remaining crumbly mixture on top.
  • Bake until golden brown and center is set, about 45 to 50 minutes. Allow to cool slightly before serving warm or cold with whipped cream. Store covered in the refrigerator.
