Whip up a vibrant stir-fry bursting with chicken, Asian greens, and crunchy nuts for a speedy and nutritious meal!
Ingredients:
  • 2 chicken breast fillets, thinly sliced
  • 2 red onions, cut into wedges
  • 5cm piece fresh ginger, peeled, cut into matchsticks
  • 2 garlic cloves, thinly sliced
  • 1 bunch baby bok choy, ends trimmed, cut into wedges
  • 1 bunch baby choy sum, ends trimmed
  • 152.50 gm oyster sauce
  • 20.00 ml Shaoxing wine or dry sherry
  • 1 tsp sesame oil
  • 1 tsp Chinese five spice
  • 125.00 ml toasted cashews
  • 125.00 ml Thai basil leaves
  • Steamed jasmine rice
Instructions:
  • In a medium bowl, mix together the chicken, onion, ginger, and garlic. Heat half of the peanut oil in a wok until smoking. Stir-fry one-quarter of the chicken for 2 minutes until golden brown, then transfer to a heatproof bowl.
  • Continue cooking the chicken mixture in three more batches, using the remaining oil and reheating the wok between each batch.
  • Add the chicken mixture back to the wok along with the bok choy, choy sum, oyster sauce, wine or sherry, sesame oil, and five-spice. Stir-fry for 1-2 minutes until the choy sum just starts to wilt. Remove from heat and mix in the cashews and half of the basil by gently tossing everything together.
  • Serve the dish in individual bowls and garnish with the rest of the fresh basil leaves.
  • Enjoy with a side of fluffy steamed rice.
