Enhance chicken dinner with aromatic five-spice blend and zesty sweet chili dressing.
Ingredients:
  • 3 tsp five-spice powder
  • 6.00 gm brown sugar
  • 46.00 gm canola oil
  • 4 chicken breast fillets
  • 175g thin rice noodles
  • 150g snow peas, trimmed, cut into strips
  • 48.80 gm fish sauce
  • 1 lime, juiced
  • 44.00 gm sweet chilli sauce
  • Handful Thai basil (see note
  • Handful coriander leaves
  • 1 long red chilli, thinly sliced
Instructions:
  • Preheat the oven to 220°C. Line a baking tray with baking paper. In a shallow bowl, combine five-spice powder, sugar, and 1 1/2 tablespoons of oil. Season the mixture and whisk until well combined. Coat the chicken with the mixture and place on the tray. Bake for 15 minutes or until the chicken is cooked through. Allow the chicken to rest for 3-4 minutes before slicing it thickly.
  • Simmer the noodles in boiling water until al dente, about 5 minutes. Toss in the snow peas for the last 30 seconds before draining. Combine fish sauce, lime juice, sweet chili sauce, and remaining 1 tablespoon oil in a bowl, whisking until well blended.
  • Coat the noodles evenly in the delightful sweet chili dressing, then portion them onto plates and garnish with the savory chicken, fresh herbs, and spicy chili.
