Flaming rum 'n' raisin

Ingredients:
  • 4 large scoops of vanilla ice cream
  • 60 g golden sultanas
  • 60 g raisins
  • 6 ginger nut biscuits
  • 100 ml dark spiced rum
Instructions:
  • Remove ice cream from the freezer. Combine sultanas, raisins, and a splash of water in a pan over medium heat to plump them up as the water evaporates. Crush biscuits in a pestle and mortar, then distribute evenly into four bowls. Place a scoop of ice cream in each bowl. Once the water has evaporated, pour rum over the sultanas and raisins and ignite carefully with a match (stand back!). Once the flames diminish, spoon the mixture over the ice cream scoops. Enjoy this heavenly dessert.
