Wholesome muffins made with Fiber One® cereal, apples, carrots, and flaxseed for a nutritious and delicious breakfast option!
Ingredients:
  • 1 cup Fiber One™ cereal
  • 2/3 cup fat-free (skim) milk
  • 1 cup Gold Medal™ all-purpose flour
  • 3/4 cup ground flaxseed or flaxseed meal
  • 3/4 cup chopped apple
  • 1/2 cup finely shredded carrot
  • 1/4 cup granulated sugar
  • 1/4 cup flaked coconut
  • 1 tablespoon canola or soybean oil
  • 3 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 4 egg whites or 1/2 cup fat-free cholesterol-free egg product
Instructions:
  • Preheat oven to 375°F. Place paper liners in 12 medium muffin cups (2 1/2x1 1/4 inches) and spray the bottoms with nonstick baking spray.
  • Crush cereal by placing it between waxed paper, plastic wrap, or in a plastic bag and using a rolling pin or blender. Combine crushed cereal with milk in a large bowl and let sit for about 5 minutes until softened. Mix in the rest of the ingredients and evenly distribute the batter among muffin cups.
  • Bake for 22 to 25 minutes until a toothpick inserted in the center comes out clean. Remove muffins from pan and serve warm.
