Velvety vanilla custard topped with fluffy meringue clouds.
Ingredients:
  • 2 egg whites
  • 3 cups milk
  • 3 eggs
  • 2 egg yolks
  • 0.5 cup white sugar
  • 1.5 teaspoons vanilla extract
Instructions:
  • Whisk salt into egg whites until foamy. Slowly add 1/4 cup sugar, continue beating until stiff peaks form.
  • In a large saucepan over medium heat, gently simmer the milk. Spoon the egg white mixture into six separate mounds, ensuring there is space between each. Poach for 3 to 5 minutes, flipping once. Using a slotted spoon, carefully remove the meringues and let them drain. Take the milk off the heat and set it aside.
  • In a large bowl, whip together whole eggs and yolks. Incorporate 1/2 cup of sugar. Gently mix in the milk from the saucepan.
  • Prepare a luscious milk mixture by gently heating it in a double boiler over simmering water. Stir continuously until it thickens to perfection and coats the back of a metal spoon. Allow the mixture to cool before blending in the fragrant vanilla essence.
  • To plate, pour the creamy custard into a dish and arrange the delicate poached meringues on top.
