Ingredients:
  • 1 qty vanilla custard (see related recipe)
  • 80g slivered almonds
  • 55g caster sugar
  • 5 large eggwhites
  • 165g caster sugar
  • 625ml milk
Instructions:
  • Prepare a decadent custard following the master recipe (refer to the related recipe) and allow it to cool to room temperature.
  • To make praline, arrange almonds on a baking-paper-lined tray. Caramelize caster sugar in a small pan over medium heat for 2-3 minutes until it turns into a golden amber color, gently shaking the pan without stirring. Drizzle the caramel over the nuts and let it harden for approximately 10 minutes. Pulse the mixture into fine crumbs using a food processor and keep aside.
  • Whisk egg whites with electric beaters until firm peaks form. Gradually beat in caster sugar with the beaters running until mixture is stiff and glossy. Heat milk in a large deep frypan over medium heat until simmering. Shape meringue mix into 8 large oval shapes using 2 serving spoons. Poach meringues gently in milk in 2 batches for 4-5 minutes, turning once, until firm. Transfer to paper towel using a slotted spoon.
  • Divide the custard among the dessert plates, top with meringues, drizzle with additional custard, and sprinkle with praline.
