Florentine potato bake recipe

Elevate your potato bake with a gourmet twist! Add layers of potatoes, creamy spinach, and cheese for the perfect golden crust.
Ingredients:
  • 280g pkt baby spinach
  • 1.5kg desiree potatoes, peeled, thinly sliced
  • 1 brown onion, thinly sliced
  • 4 garlic cloves, crushed
  • 20.00 ml fresh thyme leaves
  • 155g (1 1/2 cups) pre-grated 3 cheese blend
  • 450ml thickened cream
  • 40g (1/2 cup) finely grated parmesan
Instructions:
  • Preheat your oven to 200C (180C fan forced) and generously grease a 21 x 27cm baking dish with a 5cm depth.
  • Blanch the spinach in boiling water for 30 seconds until wilted. Drain and transfer to a bowl. Allow it to cool slightly.
  • In a large bowl, combine potato, onion, garlic, thyme, and 100g (1 cup) of cheese blend. Season with your favorite spices and toss everything together until combined.
  • After the spinach has cooled, gently press out any extra liquid using your clean hands. Spread half of the potato mixture onto the bottom of the dish. Layer half of the spinach on top, then pour over half of the cream. Repeat with the remaining potato mixture and cream. Cover the dish tightly with foil and bake for 50 minutes, or until the potato is tender.
  • Sprinkle the rest of the spinach, cheese blend, and parmesan over the potato bake. Bake uncovered for 20 minutes, or until the cheese turns golden. Let it sit for 10 minutes before serving.
