Ingredients:
  • 50g butter
  • 55g brown sugar
  • 13.40 gm golden syrup
  • Pinch of ground ginger
  • 40g plain flour
  • 50g almond
  • 50g glace cherry
  • 20.00 ml mixed peel, finely chopped
  • 100g dark chocolate, melted
Instructions:
  • Preheat your oven to 180°C and line an oven tray with baking paper. In a small saucepan over medium heat, combine butter, sugar, golden syrup, and ginger. Stir for 1-2 minutes until the butter melts and the mixture is well combined. Remove from heat, then mix in the flour, almonds, cherries, and mixed peel until fully combined.
  • Use a teaspoon to portion out 1 teaspoon of the mixture onto the tray, then delicately spread it to a 3cm diameter. Repeat this process with 3 more teaspoons, leaving space between each. Bake in the oven for 8-10 minutes. Let it sit for 2 minutes to firm up before transferring to a wire rack to cool completely.
  • Continue the process six more times with the remaining mixture. Use a round-bladed knife or small palette knife to spread a bit of the melted chocolate over the bottom of each florentine. Allow them to rest until the chocolate sets.
