Easy fluffy flatbreads perfect for soaking up curry sauce. Delicious simplicity at its best!
Ingredients:
  • 1 x 400 g tin of light coconut milk
  • 450 g self-raising flour plus extra for dusting
  • olive oil
  • 30 g unsalted butter
Instructions:
  • 1. Combine coconut milk and a pinch of sea salt in a bowl. Gradually add flour to form a dough, using your hands to bring it together. Divide into 8 balls, flatten into 10cm rounds, creating a ripple effect on top. Place on an oiled tray, cover, and set aside. 2. Heat oil and butter in a non-stick frying pan. Cook dough rounds for 2 to 3 minutes on each side until golden and puffed. Repeat with remaining rounds. Serve with Game-on curry.
