Fluffy flourless pancakes

Blend easy no-flour pancakes, fry for quick breakfast.
Ingredients:
  • 100 g porridge oats
  • 100 g cottage cheese
  • 2 large free-range eggs
  • 1 teaspoon baking powder
  • olive oil or unsalted butter for frying
  • 1 avocado optional
  • 2 large free-range eggs optional
  • chilli sauce optional
Instructions:
  • Combine oats, cottage cheese, 2 eggs, and baking powder in a blender. Blend until smooth with a touch of sea salt and a splash of water if needed to adjust consistency. Heat a non-stick pan over medium-high heat with oil or butter. Spoon batter into the pan and cook for about 2 minutes until golden, flipping halfway through. Top with avocado, fried egg, and chili sauce or your preferred toppings before serving.
