Decadent flourless chocolate cake with fluffy whipped cream.
Ingredients:
  • 300g dark chocolate, roughly chopped
  • 120g unsalted butter
  • 5 eggs, separated
  • 300g caster sugar
  • 4.40 gm vanilla extract
  • 20.00 ml rum or brandy
  • 15.00 gm cocoa powder, sifted, plus extra to dust
  • 0.63 gm cream of tartar
  • 300ml thickened cream, whipped
Instructions:
  • Preheat your oven to 180C and generously grease a 23cm springform pan.
  • Melt the chopped chocolate and butter together in a heatproof bowl placed over simmering water (ensure the bowl doesn't touch the water). Once melted, remove the bowl from the heat and stir gently until smooth. Let it cool slightly before using.
  • Cream together egg yolks and sugar using electric beaters until pale and thick. Mix in vanilla extract, rum or brandy, and cocoa. Gently fold in the chocolate mixture using a metal spoon.
  • Whisk the egg whites in a separate bowl until soft peaks form, then add cream of tartar and whisk until stiff peaks form. Gently fold a portion of the egg white mixture into the chocolate mixture, then fold in the remaining mixture.
  • Transfer the mixture into the prepared cake pan and bake in the oven for 35-40 minutes until the cake is slightly firm on the outside while still gooey in the center.
  • Take the cake out of the oven. Let it cool in the pan. Place the cake on a serving platter and fill the center with whipped cream, creating peaks like snow-capped mountains. Sprinkle with extra cocoa before serving.
