Elevate fluffy Japanese pancakes by cooking them in ring molds for a fun and impressive breakfast treat.
Ingredients:
  • 2 eggs, separated
  • 1.5 cups all-purpose flour
  • 0.25 cup white sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1.25 cups buttermilk
  • 0.25 cup melted butter
  • 0.5 teaspoon vanilla extract
Instructions:
  • Whisk egg whites in a glass, metal, or ceramic bowl until stiff peaks form.
  • Grease 3 1/2-inch ring molds generously with butter and arrange them in a frying pan over low heat. Cover with a lid.
  • Combine flour, sugar, baking powder, and baking soda in a mixing bowl.
  • In a separate bowl, mix together the buttermilk, egg yolks, butter, and vanilla extract. Add the flour mixture and stir until the batter is smooth.
  • Gently fold the fluffy egg whites into the batter until fully incorporated, with some small bits of egg whites visible.
  • Fill each mold with a generous 1/2 cup of batter and cover the pan. Cook until bubbles form on the surface, approximately 5 minutes. Flip the pancakes in the molds and continue cooking until they are fully set, about 3 to 4 minutes longer.
