Fluffy Pumpkin Spiced Cupcakes

Fluffy holiday cupcakes with decadent cream cheese frosting.
Ingredients:
  • 1 (15 ounce) can pumpkin puree
  • 1.5 cups white sugar
  • 1 cup packed brown sugar
  • 0.5 cup butter-flavored shortening
  • 0.25 cup whole milk
  • 2 cups cake flour
  • 0.25 cup dry buttermilk powder
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.75 teaspoon salt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 24 muffin cups with paper liners.
  • Combine pumpkin puree, white sugar, brown sugar, shortening, butter, milk, vegetable oil, and eggs in a large bowl, beating until smooth. In a separate bowl, whisk together cake flour, dry buttermilk powder, cornstarch, pumpkin pie spice, baking powder, baking soda, and salt. Gradually add the dry ingredients to the pumpkin mixture, stirring until well combined. Fill muffin cups prepared with batter, filling each cup about 2/3 full.
  • Bake in the preheated oven until the center of the cupcakes springs back when touched, approximately 30 minutes. Allow the cupcakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
