Unbeatable easy mug batter recipe for sweet or savory fillings - no need for scales, just a mug! Mix flour and milk, then top with your favorite ingredients for a delicious treat.
Ingredients:
  • 1 heaped mug of self-raising flour (approx 250g)
  • 1 mug of semi-skimmed milk (approx 230ml)
  • 1 large egg
  • olive oil
Instructions:
  • In a large bowl, combine flour, milk, and a pinch of salt. Add the egg and whisk until the batter is smooth. Adjust the consistency by pouring in a splash of milk until it resembles double cream and easily runs off a spoon. Heat a non-stick pan over medium heat, coat with olive oil, then pour in a thin layer of batter, swirling to cover the pan. Cook for 1 minute, flip, and cook the other side until golden. Cut halfway up the pancake, add toppings to each corner, fold, and enjoy! 🥞
