Whisk egg whites over gentle heat, then mix until light and fluffy.
Ingredients:
  • 1.5 cups white sugar
  • 6 large egg whites
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon cream of tartar
Instructions:
  • Simmer 2 cups of water in a medium pot.
  • In a stand mixer bowl, mix together sugar, egg whites, salt, and cream of tartar.
  • Lower the heat and set the stand mixer bowl over the simmering water. Gently whisk the egg whites until the mixture reaches 160 degrees F (71 degrees C) on a thermometer, which should take 6 to 10 minutes. Remove from heat promptly.
  • Add the bowl to the stand mixer with the whisk attachment. Whip on high speed for about 3 minutes until the egg whites form stiff peaks and appear silky, shiny, and pure white.
  • Use the meringue promptly.
