Indulgent meringue cookies with chocolate chips, and optional peanuts, left overnight in the oven for an irresistible texture.
Ingredients:
  • 2 egg whites
  • 1 pinch salt
  • 0.66666668653488 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 cup salted peanuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare your cookie sheets with parchment paper or aluminum foil.
  • Start by whisking egg whites and salt in a spacious glass or metal bowl until they become frothy. Slowly incorporate sugar while beating until the egg whites form stiff peaks. Gently blend in vanilla and chocolate chips and if desired, toss in some peanuts. Finally, scoop the mixture onto the baking sheets.
  • Put the cookies in the preheated oven, then immediately turn off the oven. Leave the cookies in the oven for 5 to 6 hours or overnight.
