Gluten-free meringue cookies with chocolate chips and nuts - effortless treats everyone will adore. No babysitting needed!
Ingredients:
  • 2 egg whites
  • 0.66666668653488 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup miniature chocolate chips
  • 0.5 cup chopped pecans
Instructions:
  • Preheat oven to 350°F (175°C), then line a baking sheet with aluminum foil.
  • Start by vigorously whisking egg whites in a glass or metal bowl until they turn foamy. Slowly incorporate sugar while continuously whisking until stiff peaks are achieved. The mixture should form sharp peaks when the beater or whisk is lifted straight up. Stir in vanilla extract, then gently fold in chocolate chips and pecans. Use a teaspoon to drop spoonfuls of the mixture onto a baking sheet.
  • Bake in a preheated oven for 1 minute, then turn off the oven. Let the cookies continue to bake as the oven cools until light and crispy, 5 hours to overnight.
