Cheesy casserole bursting with Cheddar, mozzarella, Parmesan, and feta, mixed with tomatoes and herbs. A hit with all ages!
Ingredients:
  • 3 cups uncooked macaroni
  • 1 (28 ounce) can whole peeled tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon basil
  • salt and pepper to taste
  • 1.5 cups grated Cheddar cheese
  • 1.5 cups shredded mozzarella cheese
  • 0.75 cup freshly grated Parmesan cheese
  • 0.25 cup crumbled feta cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • 1. Boil a large pot of lightly salted water until bubbling. Cook macaroni until al dente, about 8 to 10 minutes. Drain and transfer piping hot pasta to a casserole dish.
  • In a spacious bowl, blend tomatoes with Italian seasoning, oregano, basil, salt, and pepper.
  • Add a blend of 1 cup Cheddar, 1 cup mozzarella, and 1/2 cup Parmesan to the hot pasta, stirring until melted. Mix in tomato and herb mixture. Sprinkle 1/2 cup Cheddar, 1/2 cup mozzarella, 1/4 cup Parmesan, and 1/4 cup feta on top of the casserole.
  • Place in the oven and bake for 15 to 25 minutes.
