Indulgent baked mac and cheese with Swiss, Monterey Jack, sharp Cheddar, and Parmesan blend.
Ingredients:
  • 1 (12 ounce) package macaroni
  • 0.25 cup butter
  • 0.5 cup minced onion
  • 1.5 tablespoons minced garlic
  • 0.25 cup all-purpose flour
  • 0.5 cup half-and-half cream
  • 1.5 cups milk
  • 0.5 teaspoon dry mustard powder
  • 0.5 teaspoon liquid smoke flavoring
  • 1 cup grated Parmesan cheese
  • 1 (8 ounce) package cream cheese, cubed
  • 1 cup shredded Swiss cheese
  • 2 cups shredded Monterey Jack cheese
  • 0.33333334326744 cup shredded sharp Cheddar cheese
  • salt and pepper to taste
  • 0.5 cup bread crumbs
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and lightly grease a 9x13 inch baking dish.
  • 1. Boil generously salted water in a large pot. Cook pasta until al dente, about 8 to 10 minutes. Drain well.
  • In a large saucepan over medium heat, melt butter. Add onion and cook until softened, about 3 minutes. Add garlic and cook until onion is translucent, about 2 more minutes. Gradually add flour, stirring constantly, and cook for 5 minutes.
  • Combine half-and-half and milk in a pot and bring to a simmer. Lower heat, add mustard powder and liquid smoke, and simmer for 10 minutes. Mix in 1 cup of Parmesan cheese, cream cheese, Swiss, Monterey Jack, and Cheddar cheeses until melted. Season with salt and pepper, fold in the drained macaroni noodles. Transfer mixture to a baking dish and sprinkle with remaining 1/2 cup of Parmesan cheese and breadcrumbs.
  • Bake until golden and bubbling in a preheated oven for around 30 minutes. Let it rest for 5 to 10 minutes before serving.
