Smoky Four-Pepper Salsa

Spicy salsa with 4 types of sweet and hot peppers, customizable heat level.
Ingredients:
  • 8 ripe plum tomatoes
  • 1 tablespoon vegetable oil
  • 4 poblano peppers
  • 4 Anaheim chile peppers
  • 1 jalapeno chile pepper, or more to taste
  • 1 large green bell pepper
  • 2 tablespoons chopped cilantro leaves
  • 2 tablespoons white vinegar
  • 0.25 onion
  • 2 cloves garlic
  • 2 teaspoons salt
  • 0.25 teaspoon mesquite flavored liquid smoke concentrate
Instructions:
  • Prepare the outdoor grill to medium heat.
  • Coat tomatoes with oil and grill for 10 minutes before flipping them. Grill poblano, Anaheim, jalapeno chiles, and green pepper for 5 to 7 minutes on each side until skins blister and brown. Transfer tomatoes to a separate bowl. Let the chiles and pepper steam in an airtight container after grilling for easier peeling.
  • Peel tomatoes to remove excess liquid. Peel and seed peppers.
  • Combine tomatoes, chiles, green pepper, cilantro, vinegar, onion, garlic, and salt in a food processor. Pulse a few times until the desired consistency is reached. Adjust with liquid smoke and additional jalapenos to taste.
