Smoked Four-Pepper Beef Brisket

Indulge in tender, smoky brisket paired with your preferred barbecue sauce.
Ingredients:
  • 2 cups hickory wood chips
  • 1 tablespoon cracked black pepper
  • 1 tablespoon cracked white pepper
  • 1 tablespoon cracked red pepper
  • 1 tablespoon lemon pepper
  • 5 lb well-trimmed fresh beef brisket (not corned beef)
  • 1/2 cup barbecue sauce
Instructions:
  • Soak wood chips in water for 30 minutes until fully submerged.
  • Drain the wood chips and prepare the smoker by heating it with wood chips. For a charcoal smoker, use 5 pounds of charcoal briquettes.
  • Combine black pepper, white pepper, red pepper, and lemon pepper in a small bowl. Massage the pepper blend onto all sides of the beef.
  • Prepare the smoker rack by lightly brushing it with vegetable oil. Arrange the beef on the rack and smoke it for approximately 4 hours. Brush the beef with delicious barbecue sauce and continue smoking for an additional hour, or until the meat thermometer shows a temperature of 160°F.
