Spicy leftover turkey and ham bake, kid-friendly and ready in a flash. Topped with black olives, green onions, and tomatoes for extra flavor.
Ingredients:
  • 1 (4 ounce) can chopped green chile peppers, drained
  • 4 ounces cream cheese, softened
  • 0.5 teaspoon ground cumin
  • 2 cups chopped cooked turkey
  • 8 (8 inch) flour tortillas
  • 1 (16 ounce) jar salsa
  • 1 (16 ounce) can chili beans, undrained
  • 1 cup shredded Monterey Jack cheese
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish.
  • Combine spicy chile peppers, rich cream cheese, and fragrant cumin in a bowl. Add diced turkey and mix well.
  • Microwave the tortillas for 1 minute until softened. Spread 2 heaping tablespoons of the chile pepper mixture on each tortilla, then roll them up. Arrange the rolled tortillas seam-side down in a single layer in the baking dish.
  • Combine the salsa and beans in a bowl, then generously spoon over the enchiladas and top off with a sprinkle of cheese.
  • Bake in the preheated oven for 20 minutes or until golden brown and bubbling.
