Indulgent brunch recipe inspired by Four Seasons Bali, simple to prepare with overnight prep.
Ingredients:
  • 250g (2 1/2 cups) rolled oats
  • 300mls thin cream
  • 400mls milk
  • 60mls (1/4 cup) honey
  • 250mls (1 cup) honey-flavoured yoghurt
  • 110g (1 cup) coarsely chopped dried apple
  • 85g (1/2 cup) raisins
  • 55g (1/3 cup) almonds, coarsely chopped
  • 50g (1/3 cup) coarsely chopped dried mango
  • 40g (1/3 cup) banana chips
  • 1/2 small pineapple, skin removed and cut into small wedges
  • 2 oranges, peeled and segmented
  • 25g (1/2 cup) flaked coconut, to decorate
Instructions:
  • In a large bowl, combine rolled oats with cream and milk, stir well. Cover with plastic wrap and refrigerate overnight.
  • Take the mixture out of the fridge and gently mix in the honey and yogurt. Fold in the dried apple, raisins, almonds, dried mango, and banana chips using a large metal spoon.
  • Gently mix in the pineapple wedges and orange segments right before serving. Garnish with flaked coconut before serving.
