Creamy ravioli with irresistible greens.
Ingredients:
  • 250.00 ml fresh peas or frozen peas
  • 100g sugar-snap peas, end trimmed
  • 80g snow peas, end trimmed, thinly shredded
  • 250ml (1 cup) thickened cream
  • 40g unsalted butter
  • 250.00 ml grated parmesan
  • 1 lemon, zested, juiced
  • 700g four-cheese ravioli*
Instructions:
  • Boil peas in salted water for 5 minutes. Then add sugar-snap and snow peas for 1 more minute. Drain, cool with water, and set aside.
  • Combine the cream, butter, parmesan, lemon zest, and juice in a pan over gentle heat. Stir gently until the butter is melted. Season to taste and then set aside.
  • Prepare the ravioli according to package instructions. Drain and lightly blanch the vegetables in boiling water.
  • Plate the ravioli, generously drizzle with sauce, add vegetable toppings, season to taste, and serve.
