Indulge in creamy coconut porridge that's both delicious and nutritious. Make extra to enjoy later with various fruit and nut toppings.
Ingredients:
  • 200 g porridge mix (see below)
  • 350 ml unsweetened coconut milk
  • 1 orange
  • 1 vanilla pod
  • 2 pears
  • 1 handful of blackberries
  • 1 tablespoon hazelnuts
  • 1 tablespoon chia seeds
  • runny honey for drizzling
  • 200 g large porridge oats
  • 100 g oat bran
  • 100 g oatmeal
  • 100 g quinoa
Instructions:
  • Prepare the porridge mix by combining all ingredients in an airtight container. In a medium saucepan, combine 200g of porridge mix, coconut milk, 700ml boiling water, and orange zest. Split and scrape vanilla pod seeds into the pan. Cook over medium heat for 20 minutes, stirring continuously until creamy and thickened. Grate pears into a bowl, slice and combine with blackberries. Toast and chop hazelnuts. Remove vanilla pod, then serve porridge topped with fruit, chia seeds, hazelnuts, and a drizzle of honey.
