Fragrant orange salad

Elevate in-season oranges with fresh mint, crunchy pistachios, sweet syrup, and creamy vanilla yogurt.
Ingredients:
  • 3 oranges, skin and pith removed
  • 1 tsp orange blossom water or rosewater
  • Vanilla yoghurt, to serve
  • Toasted pistachio kernels, chopped, to serve
  • Small fresh mint leaves, to serve
Instructions:
  • Hold an orange over a bowl to catch the juice, cut each segment from between the membrane, and squeeze the remaining membrane to extract more juice. Repeat with the remaining oranges, then arrange the segments on serving plates.
  • Mix the blossom water or rosewater into the juice. Spoon yoghurt over the orange segments and pour the juice mixture on top. Garnish with pistachios and mint before serving.
