Succulent Thai chicken thighs slow-cooked in spicy salsa, creamy peanut butter, coconut milk, and zesty ginger. Serve over fluffy white rice.
Ingredients:
  • 0.75 cup hot salsa
  • 0.25 cup chunky peanut butter
  • 0.75 cup light coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 2 tablespoons grated fresh ginger
  • 2 pounds skinless chicken thighs
  • 0.5 cup chopped peanuts, for topping
  • 2 tablespoons chopped cilantro, for topping
Instructions:
  • In a slow cooker, blend together salsa, peanut butter, coconut milk, lime juice, soy sauce, sugar, and ginger until smooth. Add chicken thighs to the sauce, making sure they are completely coated.
  • Cook the chicken on Low heat for 8 to 9 hours until tender and the sauce thickens. Use a meat thermometer to ensure the thickest part of a thigh reads at least 165°F (74°C). When ready, garnish with peanuts and cilantro before serving.
