Smoky, spicy grilled flank steak with honey-lime glaze for a perfect balance of flavors without masking the meat's natural tenderness.
Ingredients:
  • 1 1/2 - 2 pound flank steak
  • For the marinade:
  • 1/4 cup white wine vinegar
  • Juice from half lime
  • 4 large cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons honey
  • 2 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried thyme
  • 1 teaspoon cumin
  • 1 teaspoon freshly cracked pepper
  • 1/2 teaspoon crushed red pepper flakes
Instructions:
  • Prepare the marinade by combining vinegar, lime juice, garlic, Worcestershire sauce, honey, smoked paprika, chili powder, salt, thyme, cumin, ground pepper, and red pepper flakes in a dish large enough for the flank steak to lay flat. Mix thoroughly using a fork until well combined.
  • After mixing the marinade, generously coat the steak with it, ensuring every inch is well covered. Refrigerate for a minimum of 2 hours, or ideally up to 8 hours, allowing the flavors to infuse perfectly.
  • Preheat the grill: For a charcoal grill, set up for two-zone grilling with one side hot and the other warm. You'll know it's ready when you can only hold your hand over the hot side for a second or two. If using a gas grill, heat to 450°F using two burners for about 10 minutes, then reduce one burner to medium for two cooking zones.
  • Grill the steak: Take the steak out of the marinade and discard it. Place the thickest part of the steak on the hottest part of the grill and the thinner side on the cooler zone. Close the lid and sear for 7 minutes. Flip the steak, close the lid, and cook for another 6 to 7 minutes until it reaches medium to medium rare doneness.
  • Slice and savor: Allow the steak to rest for 5-10 minutes, then thinly slice (less than 1⁄2 inch thick) at a diagonal angle against the grain. Present on a platter and enjoy.
