Freddo biscuit in chocolate mousse pond

Engage kids with a playful frog pond (chocolate) dessert recipe.
Ingredients:
  • 250g Light Spreadable Cream Cheese
  • 250g Milk Chocolate Melts
  • 2 egg, whites
  • 40.00 gm caster sugar
  • 6 Freddo Chocolate (or Vanilla) Biscuits
  • Assorted sprinkles, for decoration
Instructions:
  • In a bowl, mix the cream cheese with the chocolate and stir over a double boiler until the chocolate is fully melted. Remove from heat and let it cool.
  • Whisk the egg whites until stiff peaks form, gradually incorporating the sugar until it dissolves into a light meringue. Gently fold the meringue into the chocolate mixture, then spoon into serving glasses and refrigerate until needed.
  • Gently press the chocolate side of a Freddo biscuit against the bottom of a hot saucepan to melt slightly, then dip into sprinkles and let cool to set. Repeat with remaining biscuits as needed. Store in an airtight container until ready to enjoy.
  • Before serving, garnish each mousse with a Freddo biscuit and sprinkle on the remaining decorations. Enjoy right away.
