Colorful and versatile French macarons, perfect for any filling.
Ingredients:
  • 3 egg whites
  • 6 tablespoons superfine (castor) sugar
  • 1 cup almond meal
  • 1.3333333730698 cups confectioners' sugar
Instructions:
  • Preheat the oven to a cozy 320 degrees F (160 degrees C) and prepare baking sheets with parchment paper or a silicone mat.
  • In a clean metal mixing bowl, whisk egg whites until thick for about 5 minutes. Then, whisk in superfine sugar until thick, glossy, and stiff peaks form, about 5 to 8 more minutes.
  • Gradually sprinkle almond meal and confectioners' sugar over fluffy beaten egg whites and carefully fold in, keeping the mixture light and airy.
  • Separate the meringue into bowls to add your favorite flavors and colors, if desired.
  • Fill a piping bag fitted with a 3/8-inch tip with the meringue mixture. Pipe 1-inch disks onto the baking sheets, ensuring there is a 2-inch gap between each cookie.
  • Allow the cookies to sit at room temperature for 15 minutes until a thin skin forms.
  • Firmly tap the baking sheets onto the work surface to help cookies adhere.
  • Bake until tops are dry, around 15 minutes in preheated oven. Allow to cool completely on baking sheets before peeling off parchment paper, about 45 minutes.
