French macarons: Sweet almond meringue cookies filled with chocolate ganache or frosting for a delicate treat.
Ingredients:
  • 3 egg whites
  • 0.25 cup white sugar
  • 1.6666667461395 cups confectioners' sugar
  • 1 cup finely ground almonds
Instructions:
  • Prepare a baking sheet by lining it with a silicone baking mat.
  • Whisk egg whites in a stand mixer bowl until foamy. Add sugar and continue whisking until glossy, fluffy, and forming soft peaks.
  • Combine confectioners' sugar and ground almonds in a bowl, then gently fold the mixture into the egg whites using approximately 30 strokes.
  • Transfer a dollop of batter into a plastic bag with a small corner snipped off. Pipe a test disk, approximately 1 1/2 inches wide, onto the baking sheet. If the disk keeps a peak, fold the batter gently a few more times and retry.
  • Once the batter reaches the right consistency to flatten easily into an even disk, transfer it to a pastry bag with a plain round tip. Pipe the batter onto a baking sheet in rounds, ensuring there is space between each disk. Allow the piped cookies to rest at room temperature until a hard skin forms on top, approximately 1 hour.
  • Preheat your oven to a toasty 285 degrees F (140 degrees C).
  • Bake cookies in a preheated oven until they are firm but not browned, approximately 10 minutes.
  • Allow the cookies to cool off fully for approximately 30 minutes before adding the filling.
