Indulgent chocolate French silk pie - a timeless dessert favorite.
Ingredients:
  • 1 (9 inch) frozen deep-dish pie crust, thawed
  • 0.66666668653488 cup white sugar
  • 2 eggs
  • 2 (1 ounce) squares unsweetened chocolate, melted and cooled
  • 1.5 teaspoons vanilla extract
  • 0.33333334326744 cup unsalted butter, at room temperature
  • 1 cup cold heavy whipping cream
  • 3 tablespoons powdered sugar
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • Egg wash the entire pie crust, edges included, then dock with a fork to create holes on the bottom and sides.
  • Bake in the preheated oven until beautifully golden, for 10 to 15 minutes. Allow it to cool completely for about 30 minutes before enjoying.
  • In a medium saucepan over gentle heat, whisk together sugar and 2 eggs. Continuously stir to prevent boiling, until the mixture coats the back of a spoon and reaches 160 degrees F (70 degrees C) on a thermometer, approximately 10 minutes.
  • Take the mixture off the heat and blend in the melted chocolate and vanilla extract. Let it cool until lukewarm, for about 15 to 20 minutes.
  • In a separate large bowl, use an electric mixer to beat the butter until it is light and fluffy. Add the chocolate mixture and continue to beat on high speed until it becomes thick and creamy, which should take about 5 minutes.
  • Whip cold heavy cream until just thickened in a separate bowl. Add powdered sugar and beat on medium to medium-high speed until stiff peaks form. Gently fold into chocolate mixture to maintain volume, then pour into pie crust and refrigerate for a minimum of 2 hours before serving.
