French-inspired cheesy potato bake - a romantic twist on a classic American casserole for your sweetheart.
Ingredients:
  • 3 large potatoes, peeled and sliced
  • 7 slices bacon, chopped
  • 1 large onion, sliced
  • 0.25 cup white wine
  • 2 tablespoons creme fraiche
  • 1 (8 ounce) round Reblochon cheese
Instructions:
  • First, vigorously boil a large pot of salted water. Gently introduce the potatoes, then lower the heat to medium-low, covering the pot to simmer until tender for approximately 20 minutes. Drain the potatoes and let them sit for a minute or two to steam dry.
  • Preheat the oven to 425 degrees F (220 degrees C) and generously grease an 8-inch square baking dish.
  • Cook bacon in a skillet until crisp, then set aside. Discard excess fat. In the same skillet, melt butter and sauté onions until translucent. Add bacon back in, pour in wine, and simmer until wine reduces. Remove from heat.
  • - Layer half of the potatoes in the prepared dish, followed by half of the bacon mixture. - Add the remaining potatoes, spread the creme fraiche over them, and top with the rest of the bacon mixture. - Slice the rind off the Reblochon, cut it into thin slices, and evenly layer them over the casserole.
  • Place in preheated oven until cheese is bubbly and golden brown, approximately 15 minutes. Season with salt and pepper to taste before serving piping hot.
