Creamy French potato side dish elevates any meal to gourmet status.
Ingredients:
  • 1.2kg Kestrel potatoes, peeled
  • Butter, to grease
  • 200g kaiserfleisch, rind removed, thinly sliced (see note)
  • 1 brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 80ml (1/3 cup) white wine
  • 300ml ctn thickened cream
  • 2 tsp fresh thyme leaves
  • 80g (1 cup) coarsely grated Swiss cheese
Instructions:
  • In a large saucepan, cover the potatoes with cold water and bring to a boil over high heat. Cook for 15 minutes until just tender. Drain and let them cool for 5 minutes before slicing into 1cm-thick pieces.
  • Preheat oven to 180°C. Grease a 2L (8-cup) baking dish with butter. In a non-stick pan, crisp up the kaiserfleisch and onion over medium-high heat for 7 minutes. Add garlic and sauté until fragrant. Deglaze with wine, reduce slightly, then stir in cream, thyme, and season with pepper.
  • Layer half of the potato slices in the dish, followed by half of the kaiserfleisch mixture. Repeat with the remaining potato and kaiserfleisch. Sprinkle cheese on top. Cover with baking paper and foil, then bake for 25 minutes. Uncover and bake for an additional 20 minutes until golden brown.
