French toast with pears, dates and cinnamon maple syrup

Ingredients:
  • 185ml (3/4 cup) skim milk
  • 2 eggs
  • 15.00 gm caster sugar
  • 4.40 gm vanilla essence
  • Melted butter, to grease
  • 1 unsliced vienna loaf, ends trimmed, cut into eight 2cm-thick slices
  • 125ml (1/2 cup) maple syrup
  • 0.63 gm ground cinnamon
  • 2 just-ripe pears (like williams or packham), halved lengthways, cored, quartered lengthways
  • 6 fresh dates, halved, stones removed, halved again lengthways
Instructions:
  • Preheat oven to 100°C for a perfect baking environment.
  • In a large bowl, whisk together the milk, eggs, sugar, and vanilla essence until well combined.
  • Lightly coat a large non-stick frying pan with melted butter. Heat over medium heat. Dip 4 slices of bread at a time in the milk mixture, then add to the pan. Cook each side for 2 minutes until golden. Transfer to a baking tray and keep warm in a preheated oven. Repeat with remaining bread slices and milk mixture, greasing the pan as needed.
  • In a jug, blend the maple syrup with cinnamon until well combined. Pour 2 tablespoons of the maple syrup mixture into a large saucepan. Cook the pears in the pan over medium heat for 1 minute on each side until tender. Then add the dates and cook for 30 seconds until warmed through. Remove from heat.
  • Top warm French toast with pears and dates, then drizzle with the remaining cinnamon maple syrup before serving.
