Fresh Berry Push It Up Pops

Food blogger Lauren Keating presents a delicious summer dessert.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 2 egg whites
  • 12 ounces seltzer water
  • Red food color
  • Blue food color
  • 18 plastic push-up pop containers
  • 1 cup frozen (thawed) fat free whipped topping
  • 1 pint blueberries
  • 9 strawberries, chopped
Instructions:
  • Preheat oven to 350°F and generously coat 36 mini muffin cups with cooking spray.
  • Combine cake mix, egg whites, and seltzer water in a medium bowl until well combined. Divide the batter evenly into two bowls. Color one bowl with a few drops of red food color and the other bowl with blue food color.
  • Spoon red batter into 18 mini muffin cups, filling them 2/3 full. Bake for around 15 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven. Then, repeat the process with blue batter to yield 18 more mini cupcakes. Allow them to cool completely.
  • For push-up cakes, place one blue mini cupcake in each push-up pop container. Add a layer of blueberries and 1/2 teaspoon of whipped topping. Place a red mini cupcake on top of each, add whipped topping dollops, and finish with chopped strawberries.
