Sweet Carrot Soufflé: Velvety blend of carrots, sugar, and eggs, reminiscent of a decadent sweet potato casserole.
Ingredients:
  • 1.75 pounds carrots, peeled and chopped
  • 1 cup white sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons vanilla extract
  • 2 tablespoons all-purpose flour
  • 3 eggs, beaten
  • 0.5 cup margarine, softened
  • 2 teaspoons confectioners' sugar
Instructions:
  • Heat your oven to 350 degrees F (175 degrees C).
  • Bring a large pot of water to a boil, then cook carrots until very tender, about 7 to 10 minutes. Drain and transfer to a large mixing bowl.
  • In a large mixing bowl, combine warm carrots, sugar, baking powder, and vanilla extract. Use an electric mixer to blend until smooth. Add flour, eggs, and margarine, and mix well. Transfer the mixture to a 2-quart baking dish.
  • Bake in the preheated oven for 1 hour until the top is golden brown. Dust with confectioners' sugar before serving.
