Indulge in fresh Northwest sweet cherries and savor summer by making a quick and delicious cherry compote for later enjoyment.
Ingredients:
  • 1 pound whole unpitted Northwest cherries
  • 2 tablespoons granulated sugar
  • 1 teaspoon finely grated orange zest
  • 1/4 cup orange juice
  • Pinch kosher salt
  • 1 teaspoon balsamic vinegar
Instructions:
  • Prepare the cherries: Pit the cherries using a cherry pitter or gently press on them with the heel of your hand to loosen the pits. Cut the cherries in half, leaving a few whole if desired. Aim for about 2 1/2 cups of pitted cherries.
  • In a medium non-reactive saucepan over medium-high heat, combine pitted cherries, sugar, orange zest, orange juice, and salt. Bring to a boil, then simmer and stir occasionally for about 4 minutes until cherries release juices and sugar dissolves.
  • Chill the compote: Take the pan off the heat and mix in the vinegar. Transfer to a glass jar, cool to room temperature, seal with the lid, and refrigerate. Keeps well for 1 week in the fridge or up to 12 months in the freezer.
