Fresh mango salsa

Ingredients:
  • 2 ripe large (about 500g) mangoes
  • 1 large Lebanese cucumber, peeled, halved lengthways, seeds removed, finely chopped
  • 85g (1/2 cup) sultanas
  • 40.00 ml roughly chopped fresh dill
  • 40.00 ml finely chopped fresh chives
  • 42.00 gm fresh lemon juice
  • Ground black pepper, to taste
Instructions:
  • Cut the mango cheeks close to the seeds and peel off the skin. Remove any remaining flesh from the seeds, then roughly dice the mango and transfer it to a medium bowl.
  • Combine cucumber, sultanas, dill, chives, lemon juice, and pepper with mango. Toss until well mixed. Transfer to a serving bowl.
