Fish with mango and tomato salsa

Tantalizing mango salsa pairs perfectly with fresh fish.
Ingredients:
  • 2 large mangoes
  • 3 ripe tomatoes, quartered, deseeded
  • 45.50 gm olive oil
  • 1cm piece ginger, peeled, grated
  • 44.00 gm sweet chilli sauce
  • 4 white fish fillets, skin removed
  • 40.00 ml finely chopped chives
  • Garlic bread, to serve
Instructions:
  • Peel mangoes and cut flesh into 2cm cubes, transferring them to a bowl as you go.
  • Dice tomato into 2cm cubes, then mix with mango. In a jar, shake together 2 tablespoons of oil, ginger, sweet chili sauce, salt, and pepper. Pour this mixture over the mango and tomato. Gently stir to combine. Let sit at room temperature for 10 minutes before serving.
  • Coat fish fillets with the remaining 2 teaspoons of oil, then season with salt and pepper. Preheat a barbecue plate over medium-high heat and grill fish for 2 minutes on each side or until fully cooked.
  • Mix fresh chives into the salsa. Serve the fish alongside the salsa and garlic bread.
