Fish with mango salsa

Delicious mango and fish combo for an easy weeknight dinner.
Ingredients:
  • 2 mangoes, peeled
  • 1 telegraph cucumber, halved, deseeded
  • 700g fish fillet
  • 3 limes
  • 36.40 gm olive oil
  • 5.00 gm caster sugar
  • 125.00 ml flat-leaf parsley, chopped
  • dressed salad leaves, to serve
Instructions:
  • Dice mango and cucumber into 1 1/2cm cubes, combine in a bowl, and refrigerate until serving.
  • Slice the limes thinly. Prepare 4 large squares of baking paper. Lay out lime slices in the middle of each paper. Put the fish, skin-side down, on top of the lime slices. Season with salt and pepper. Wrap the fish securely in the baking paper.
  • Microwave the dish on MEDIUM (50%) power for 10 minutes or until the fish easily flakes with a fork.
  • Juice the remaining lime. Mix the lime juice, oil, sugar, parsley, salt, and pepper in a screw-top jar. Shake vigorously. Drizzle the dressing over the mango mixture and toss gently. Plate the fish, top with the salsa, and serve alongside a fresh salad.
