Crispy spiced tilapia with tropical mango-pineapple salsa for a delightful Caribbean meal.
Ingredients:
  • 1 tablespoon paprika
  • 2 teaspoons curry powder
  • 2 teaspoons ground cumin
  • 1.5 teaspoons ground allspice
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 0.75 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon ground fennel seed
  • 0.125 teaspoon cayenne pepper
  • 1 mango - peeled, seeded and diced
  • 1 cup chopped fresh pineapple
  • 0.5 red bell pepper, chopped
  • 0.5 cup black beans, rinsed and drained
  • 0.5 red onion, finely chopped
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons fresh lime juice
  • 1 large egg
  • 0.33333334326744 cup milk
  • 1 cup panko bread crumbs
  • 1 tablespoon dried unsweetened coconut, or to taste
  • 1 tablespoon olive oil, or as needed
  • 5 (4 ounce) fillets tilapia
Instructions:
  • Combine paprika, curry powder, cumin, allspice, ginger, coriander, salt, black pepper, fennel, and cayenne pepper in a bowl; let flavors meld.
  • Combine juicy mango, sweet pineapple, crunchy red bell pepper, hearty black beans, zesty red onion, and fresh cilantro in a bowl. Drizzle with refreshing lime juice, mix well, and chill in the refrigerator for at least 30 minutes.
  • Combine egg and milk in one bowl, and mix panko crumbs with coconut in another bowl. Add about 1 tablespoon of the spice mix, adjusting to your preference, to the panko crumb mixture.
  • 1. Heat olive oil in a skillet. Coat tilapia fillets in egg mixture, then panko crumbs. Pan-fry in the hot oil until golden brown and opaque, about 3-5 minutes per side. Serve with mango salsa.
