Spiced fish with mango and herb salad recipe

Delicious Aussie Ling fish dish with summer flavors ready in 30 minutes - perfect for the whole family!
Ingredients:
  • 200g tub plain Greek-style yoghurt
  • 1 Lebanese cucumber, seeded, grated
  • 1 small garlic clove, crushed
  • 56.88 gm extra virgin olive oil
  • 450g packet microwave basmati rice
  • 2 cups mixed fresh mint, coriander and parsley leaves
  • 2 green onions, thinly sliced diagonally
  • 1 mango, sliced
  • 8.80 gm toasted coconut flakes
  • Lime pickle, to serve
  • 4 x 180g boneless ling fillets
  • 82.50 ml plain flour
  • 1/2 tsp ground turmeric
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1/2 tsp dried chilli flakes
Instructions:
  • Mix together the yogurt, cucumber, garlic, and half of the juice in a bowl. Season with your favorite spices. Let it sit for the flavors to meld.
  • Create a flavorful Spice Mix by mixing all the ingredients in a bowl and seasoning to perfection.
  • Coat fish with spice mix, shaking off any extra. Place on a plate. Heat 21⁄2 tablespoons of oil in a large frying pan over medium-high heat. Add fish and cook for 2 to 3 minutes on each side until done.
  • While the rice is cooking according to the packet instructions, mix together the herbs, onion, mango, coconut flakes, remaining juice, and oil in a bowl. Season the mixture to taste. Once the rice is done, distribute it evenly among serving bowls. Top the rice with the fish, yogurt mixture, and mango salad. Serve the dish with pickle on the side.
