Berry-filled no-bake pie in shortbread crust. Perfect for hot days. Top with whipped cream.
Ingredients:
  • 1 (16 ounce) package fresh strawberries, hulled and large berries cut in half
  • 1 pint fresh blueberries
  • 1 (6 ounce) container fresh raspberries
  • 1 (6 ounce) container fresh blackberries
  • 1 cup water
  • 0.5 cup white sugar
  • 3 tablespoons cornstarch
  • 0.25 cup water
  • 1 (9 inch) prepared shortbread pie crust (such as Keebler®)
Instructions:
  • In a bowl, mix together strawberries, blueberries, raspberries, and blackberries. Set aside a 3/4 cup portion of the mixed berries. In a saucepan, combine the 3/4 cup mixed berries with 1 cup water and sugar. Bring to a boil, then simmer over medium-low heat. Keep the rest of the berries aside.
  • In a bowl, whisk together cornstarch and 1/4 cup water until smooth. Stir the cornstarch mixture into the hot fruit syrup and continue stirring until thickened, about 2 minutes. Allow the mixture to cool completely, stirring occasionally, for about 20 minutes.
  • Combine the thickened berry mixture with fresh berries until well mixed, then pour the berries and sauce into the shortbread pie crust. Chill in the refrigerator for at least 1 hour before serving.
