Easy pineapple dessert, perfect for barbecues.
Ingredients:
  • 1 small tub crème fraîche
  • 1 vanilla pod scored lengthways and seeds scraped out
  • 1 pineapple
  • icing sugar for dusting
  • 1 handful fresh mint leaves picked and finely sliced
Instructions:
  • Preheat your barbecue. Mix crème fraîche with vanilla seeds. Set aside. Remove ends of pineapple. Peel skin and slice thinly, dust with icing sugar. Clean barbecue grates. Grill pineapple slices for 30 seconds on each side. Remove and place on serving plate. Top with mint and a dollop of vanilla-flavoured crème fraîche.
