Transform your morning with a berry-filled coffee cake, topped with a sweet glaze for the perfect balance of freshness and sweetness.
Ingredients:
  • 1/2 cup butter or margarine, melted
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh raspberries
  • 1/2 cup powdered sugar
  • 1 tablespoon butter or margarine, softened
  • 2 to 3 teaspoons water
  • 1/4 teaspoon almond extract
Instructions:
  • Preheat oven to 400°F and generously coat a 9- or 8-inch square pan with baking spray that includes flour.
  • In a medium bowl, cream together 1/2 cup of butter, milk, vanilla, and egg until smooth. Gently mix in flour, granulated sugar, baking powder, and salt until just combined. Carefully fold in raspberries, then spread the batter in the pan.
  • Bake until the top is golden brown and a toothpick inserted in the center comes out clean, about 25-30 minutes. Allow to cool for 20 minutes before serving.
  • Combine glaze ingredients in a small bowl until smooth and at drizzling consistency. Drizzle over the warm coffee cake.
