Fresh salsa with crispy tortilla chips

"Delicious and light tortilla chips paired with fresh salsa, a perfect snack!"
Ingredients:
  • 82.50 ml coriander, chopped
  • 31.50 gm lime juice
  • 4 ripe tomatoes, diced
  • 3 spring onions, finely sliced
  • Vegetable oil, to shallow fry
  • 12 white corn tortillas
  • Lime wedges, to serve
Instructions:
  • In a bowl, mix together the tomatoes, spring onions, and coriander. Drizzle lime juice over the mixture and season with salt and pepper to taste.
  • In a large frying pan, heat a generous amount of oil until it measures about 5mm. Cook 2 tortillas over medium-high heat until they are beautifully golden brown on both sides. Place them on paper towels to drain. Repeat the process with the remaining tortillas. Allow the tortillas to cool before using.
  • Crack tortillas into big pieces and enjoy them as tortilla chips with zesty salsa and tangy lime wedges.
